Artichoke salad

Ingredients (nutrition)

  • 14 oz drained and cut into halves canned artichoke hearts
  • some olive oil
  • salt and ground black pepper to taste
  • 7 fl oz grape seed oil
  • 7 fl oz extra virgin olive oil
  • 4 fl oz white wine vinegar
  • pinch of mustard powder
  • pinch of granulated sugar
  • 2 crushed garlic cloves
  • 3 Little Gem lettuces

Cooking Instructions

  1. Preheat the grill until hot. Season artichoke hearts with salt, pepper and brush with olive oil. Grill until charred round the edges.
  2. To make the dressing, combine grape seed oil, extra virgin olive oil, vinegar, mustard powder, sugar and garlic into a large mixing bowl. Season well with salt and pepper.
  3. Toss the lettuces, artichokes in the dressing and serve.
