Ingredients (nutrition)
- 1/2 cup canola oil
- 1/2 cup cider vinegar
- 1/2 cup sugar
- 2 teaspoons celery seed
- 2 teaspoons Dijon mustard
- salt and freshly ground black pepper to taste
- 16 oz coleslaw mix
- 1 cup diced sweet red pepper
- 3 tablespoons chopped red onion
- 1/2 cup bacon bits
Cooking Instructions
- To make the dressing, mix oil, vinegar, sugar and celery seed in a saucepan. Bring to boil over medium heat and stir continuously until sugar dissolved.
- Remove from heat and add mustard.
- Whisking into the mixture and season well with salt and pepper to taste.
- Allow dressing to cool. Set aside.
- Using a salad bowl, add coleslaw, red pepper, red onion and bacon bits.
- Drizzle salad with dressing and serve.
