Healthy banana pecan salad

Ingredients (nutrition)

  • 2 oz finely chopped lean back bacon
  • 7 oz sliced banana
  • 2 oz chopped pecan nuts
  • 11 oz sliced celery
  • 1/2 thinly sliced lime
  • 9 oz low fat Greek style yogurt
  • 6 lettuce leaves

Cooking Instructions

  1. Grill bacon until crisp and crumble into small pieces.
  2. Mix bacon crisp, banana, pecan nuts, celery, lime and yogurt in a large bowl.
  3. Place a lettuce leaf on the bottom of individual serving bowls and scoop the mixture on top of the lettuce.
  4. Ready to serve.
