Ingredients (nutrition)

  • 15oz drained canned black beans
  • 15 oz drained canned sweetcorn kernels
  • 4 oz chopped onion
  • 7 oz chopped celery
  • 2 oz chopped fresh coriander
  • 6 oz ready-prepared salsa
  • 1 fl oz red wine vinegar

Cooking Instructions

  1. Combine beans, sweet corn, onion, celery and coriander in a large mixing bowl.
  2. To make the dressing, blend salsa and vinegar together.
  3. Pour dressing over the salad and toss well.
  4. Cover and chill for at least 1 hour in the refrigerator before serving.
