Ingredients (nutrition)
- 15oz drained canned black beans
- 15 oz drained canned sweetcorn kernels
- 4 oz chopped onion
- 7 oz chopped celery
- 2 oz chopped fresh coriander
- 6 oz ready-prepared salsa
- 1 fl oz red wine vinegar
Cooking Instructions
- Combine beans, sweet corn, onion, celery and coriander in a large mixing bowl.
- To make the dressing, blend salsa and vinegar together.
- Pour dressing over the salad and toss well.
- Cover and chill for at least 1 hour in the refrigerator before serving.
