Blue cheese potato salad

Ingredients (nutrition)

  • 4 slices bacon
  • 2 lb red new potatoes
  • 1/2 cup olive oil
  • 3 tablespoons white vinegar
  • 1 chopped green onion
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 1/2 oz crumbled blue cheese

Cooking Instructions

  1. Cook the bacon in a deep skillet over medium high heat until brown.
  2. Drain and crumble the bacon. Set aside.
  3. Boil salted water in a large pot.
  4. Add in potatoes and cook until tender, for about 15 minutes.
  5. Leaving the potato skins on, drain, cool and chop.
  6. In a large salad mixing bowl, whisk in oil, vinegar, green onions, salt and pepper.
  7. Add the potatoes, bacon, cheese and toss.
  8. Ready to serve.
