Ingredients (nutrition)
- 4 slices bacon
- 2 lb red new potatoes
- 1/2 cup olive oil
- 3 tablespoons white vinegar
- 1 chopped green onion
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 oz crumbled blue cheese
Cooking Instructions
- Cook the bacon in a deep skillet over medium high heat until brown.
- Drain and crumble the bacon. Set aside.
- Boil salted water in a large pot.
- Add in potatoes and cook until tender, for about 15 minutes.
- Leaving the potato skins on, drain, cool and chop.
- In a large salad mixing bowl, whisk in oil, vinegar, green onions, salt and pepper.
- Add the potatoes, bacon, cheese and toss.
- Ready to serve.
