Simple broccoli salad

Ingredients (nutrition)

  • 2 lb fresh broccoli
  • 8 oz sliced fresh mushrooms
  • 4 oz low fat mayonnaise
  • 4 oz low fat sour cream
  • 1 crushed garlic clove
  • 1 teaspoon grated onion
  • 1 teaspoon granulated sugar
  • pinch of freshly ground black pepper
  • handful of drained and sliced chestnuts

Cooking Instructions

  1. Slice off and remove tough ends of the broccoli stalks. Break the florets into small clusters.
  2. Steam broccoli for about 15 minutes until al dente.
  3. Refresh in cold water and drain.
  4. Combine mushrooms, mayonnaise, sour cream, garlic, onion, sugar and pepper in a medium bowl.
  5. In a separate large salad bowl, mix broccoli and water chestnuts. Add in the mushroom mixture and toss gently.
  6. Cover with cling film and chill for approximately 3 hours before serving.
