Ingredients (nutrition)
- 2 lb fresh broccoli
- 8 oz sliced fresh mushrooms
- 4 oz low fat mayonnaise
- 4 oz low fat sour cream
- 1 crushed garlic clove
- 1 teaspoon grated onion
- 1 teaspoon granulated sugar
- pinch of freshly ground black pepper
- handful of drained and sliced chestnuts
Cooking Instructions
- Slice off and remove tough ends of the broccoli stalks. Break the florets into small clusters.
- Steam broccoli for about 15 minutes until al dente.
- Refresh in cold water and drain.
- Combine mushrooms, mayonnaise, sour cream, garlic, onion, sugar and pepper in a medium bowl.
- In a separate large salad bowl, mix broccoli and water chestnuts. Add in the mushroom mixture and toss gently.
- Cover with cling film and chill for approximately 3 hours before serving.
