Ingredients (nutrition)

  • 1 1/2 lb brussels sprouts
  • 1 1/2 cups toasted and crushed hazelnuts
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 1/2 cup minced fresh chives
  • salt to taste
  • 2 oz Parmesan cheese

Cooking Instructions

  1. Shred the brussels sprouts thin using a mandoline or a knife.
  2. Place the shredded sprouts in a large bowl and toss gently with hazelnuts, olive oil, lemon juice, chives and salt.
  3. Toss in the cheese and serve immediately.
