Ingredients (nutrition)
- 3 shredded large carrots
- 1 cup raisins
- 1/4 cup finely chopped celery
- 1 cup walnuts
- 2 tablespoons shredded coconut
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 tablespoon cider vinegar
- 1/2 teaspoon caster sugar
- 1/4 teaspoon salt
Cooking Instructions
- Mix carrots, raisins, celery, walnuts and coconut in a bowl.
- Whisk in mayonnaise, sour cream, vinegar, sugar and salt in a separate bowl.
- Stir in the dressing into the carrot mixture.
- Chill in the refrigerator for at least 2 hours before serving.
