How to make: Carrot and raisin salad

Ingredients (nutrition)

  • 3 shredded large carrots
  • 1 cup raisins
  • 1/4 cup finely chopped celery
  • 1 cup walnuts
  • 2 tablespoons shredded coconut
  • 1/2 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon cider vinegar
  • 1/2 teaspoon caster sugar
  • 1/4 teaspoon salt

Cooking Instructions

  1. Mix carrots, raisins, celery, walnuts and coconut in a bowl.
  2. Whisk in mayonnaise, sour cream, vinegar, sugar and salt in a separate bowl.
  3. Stir in the dressing into the carrot mixture.
  4. Chill in the refrigerator for at least 2 hours before serving.
