Ingredients (nutrition)
- 1 lb 2oz diced red apples
- 3 tablespoons freshly squeezed lemon juice
- 5 fl oz mayonnaise
- 3 oz chopped walnuts
- 1 thinly sliced bunch of celery
- 1 crushed garlic clove
- 4 sliced shallots
- 1 lb 2oz cubed skinless lean cooked chicken
- salt and ground black pepper to taste
Cooking Instructions
- Put the diced apple in a bowl with lemon juice and 1 tablespoon of the mayonnaise.
- Cover with cling film and set aside for 35 minutes.
- Add the walnuts, celery, garlic, shallots to the apple and mix well with the remaining mayonnaise.
- Add chicken and mix well.
- Season well with salt and pepper.
- Serve immediately.
