Low fat corn salad

Ingredients (nutrition)

  • 15 oz drained whole kernel corn
  • 2 coarsely chopped tomatoes
  • 3/4 cup cucumber slices
  • 1/4 cup diced onions
  • 2 tablespoons mayonnaise
  • 1/4 cup sour cream
  • 1/4 teaspoon dry mustard
  • 1 tablespoon distilled white vinegar
  • 1/4 teaspoon celery seed
  • salt to taste

Cooking Instructions

  1. In a large mixing salad bowl, combine corn, tomatoes, cucumbers and onions.
  2. To make the dressing, whisk together mayonnaise, sour cream, mustard, vinegar, celery seeds and salt.
  3. Add dressing to corn mixture and toss until all ingredients are evenly coated.
  4. Serve immediately.
