Sweet cranberry spinach salad

Ingredients (nutrition)

  • 1 tablespoon butter or margarine
  • 3/4 cup blanched and silvered almonds
  • 1 lb rinsed and torn into pieces spinach
  • 1 cup dried cranberries
  • 1 1/2 tablespoons poppy seeds
  • 2 tablespoons toasted sesame seeds
  • 2 teaspoons minced onion
  • 1/2 cup white sugar
  • 1/4 teaspoon paprika
  • 1/2 cup canola oil
  • 1/4 cup cider vinegar
  • 1/4 cup white wine vinegar

Cooking Instructions

  1. Melt butter or margarine over medium heat in a saucepan.
  2. Cook and stir almonds in until lightly toasted.
  3. Remove from heat and allow to cool.
  4. In a large salad mixing bowl, combine the spinach, cranberries with the toasted almonds.
  5. To make the dressing, whisk together the poppy seeds, sesame seeds, onion, sugar, paprika, canola oil, cider vinegar and white wine vinegar in a separate medium bowl.
  6. Toss the dressing with spinach just before serving.
