Ingredients (nutrition)
- 1 tablespoon butter or margarine
- 3/4 cup blanched and silvered almonds
- 1 lb rinsed and torn into pieces spinach
- 1 cup dried cranberries
- 1 1/2 tablespoons poppy seeds
- 2 tablespoons toasted sesame seeds
- 2 teaspoons minced onion
- 1/2 cup white sugar
- 1/4 teaspoon paprika
- 1/2 cup canola oil
- 1/4 cup cider vinegar
- 1/4 cup white wine vinegar
Cooking Instructions
- Melt butter or margarine over medium heat in a saucepan.
- Cook and stir almonds in until lightly toasted.
- Remove from heat and allow to cool.
- In a large salad mixing bowl, combine the spinach, cranberries with the toasted almonds.
- To make the dressing, whisk together the poppy seeds, sesame seeds, onion, sugar, paprika, canola oil, cider vinegar and white wine vinegar in a separate medium bowl.
- Toss the dressing with spinach just before serving.
