Homemade egg salad

simple and tasty egg salad

Ingredients (nutrition)

  • 5 eggs
  • 1 teaspoon curry powder
  • 3 tablespoons plain yogurt
  • salt to taste
  • 1/2 chopped onion
  • 1/2 chopped apple
  • 1/4 cup toasted and chopped pecans
  • 1 bunch of minced chives

Cooking Instructions

  1. Place the eggs in a pot and cover with cold water. Bring to a gentle boil.
  2. Turn off the heat, cover, and let the eggs sit for 7 minutes.
  3. Have a bowl of ice water ready and when the eggs are done cooking, place them in the ice bath for 3 minutes.
  4. Crack and peel each egg, and place in a medium mixing bowl.
  5. Combine yogurt, curry powder and salt in a separate bowl.
  6. Add the yogurt mixture, onions, apple, pecans, and chives together with the egg.
  7. Mash the mixture with a fork.
  8. Chill for several hours before serving.
