Ingredients (nutrition)
- 5 eggs
- 1 teaspoon curry powder
- 3 tablespoons plain yogurt
- salt to taste
- 1/2 chopped onion
- 1/2 chopped apple
- 1/4 cup toasted and chopped pecans
- 1 bunch of minced chives
Cooking Instructions
- Place the eggs in a pot and cover with cold water. Bring to a gentle boil.
- Turn off the heat, cover, and let the eggs sit for 7 minutes.
- Have a bowl of ice water ready and when the eggs are done cooking, place them in the ice bath for 3 minutes.
- Crack and peel each egg, and place in a medium mixing bowl.
- Combine yogurt, curry powder and salt in a separate bowl.
- Add the yogurt mixture, onions, apple, pecans, and chives together with the egg.
- Mash the mixture with a fork.
- Chill for several hours before serving.
