Traditional Greek salad

Ingredients (nutrition)

  • 1 large cucumber
  • 4 large beefsteak tomatoes
  • 1 Cos lettuce
  • 2 red onions
  • 4 oz pitted black olives
  • 4 fl oz olive oil
  • 2 fl oz lemon juice
  • 3 tablespoons chopped fresh coriander leaves
  • pinch of granulated sugar
  • salt and ground black pepper
  • 8 oz feta cheese

Cooking Instructions

  1. Cut the cucumber in half crossways, then cut a cross in the end of each piece and cut into quarters. Cut the quarters crossways into bite size pieces.
  2. Remove the core tomatoes. Cut the tomatoes into bite size chunks.
  3. Shred the lettuce.
  4. Peel the onions and cut into thin wedges.
  5. Put the salad vegetables in a large bowl. Add the olives and toss the ingredients together.
  6. To make the dressing, whisk in olive oil, lemon juice, coriander leaves, sugar, salt and pepper.
  7. Pour the dressing over the salad, toss gently to mix.
  8. Crumble over the feta cheese on top of the salad.
  9. Ready to serve.
