Ingredients (nutrition)
- 1 large cucumber
- 4 large beefsteak tomatoes
- 1 Cos lettuce
- 2 red onions
- 4 oz pitted black olives
- 4 fl oz olive oil
- 2 fl oz lemon juice
- 3 tablespoons chopped fresh coriander leaves
- pinch of granulated sugar
- salt and ground black pepper
- 8 oz feta cheese
Cooking Instructions
- Cut the cucumber in half crossways, then cut a cross in the end of each piece and cut into quarters. Cut the quarters crossways into bite size pieces.
- Remove the core tomatoes. Cut the tomatoes into bite size chunks.
- Shred the lettuce.
- Peel the onions and cut into thin wedges.
- Put the salad vegetables in a large bowl. Add the olives and toss the ingredients together.
- To make the dressing, whisk in olive oil, lemon juice, coriander leaves, sugar, salt and pepper.
- Pour the dressing over the salad, toss gently to mix.
- Crumble over the feta cheese on top of the salad.
- Ready to serve.
