Ingredients (nutrition)
- 1 lb wedged new potatoes
- 4 tablespoons extra virgin olive oil
- 3 skinned and broken into strips smoked mackerel fillets
- 1/2 seeded and diced cucumber
- 9 oz cherry tomatoes, cut into halves
- 3 oz watercress
- salt and freshly ground black pepper to taste
- 2 tablespoons white wine vinegar
- 2 teaspoons horseradish sauce
Cooking Instructions
- Put potatoes in a pot of cold water, cover and bring to boil.
- Cook the potatoes for 15 minutes until tender.
- Drain well, tip back into the pan and add 1 tablespoon of olive oil.
- Season with salt and pepper.
- Cover the pan and shake well to mix.
- Add the potatoes into a large mixing salad bowl.
- Add the mackerel, cucumber, tomatoes, watercress and a pinch of salt and pepper.
- To make the dressing, combine together the horseradish, remaining oil and vinegar in a bowl.
- Season with salt and pepper to taste.
- Pour the dressing over the salad.
- Toss gently and serve.
