Homemade smoked Mackerel salad

Ingredients (nutrition)

  • 1 lb wedged new potatoes
  • 4 tablespoons extra virgin olive oil
  • 3 skinned and broken into strips smoked mackerel fillets
  • 1/2 seeded and diced cucumber
  • 9 oz cherry tomatoes, cut into halves
  • 3 oz watercress
  • salt and freshly ground black pepper to taste
  • 2 tablespoons white wine vinegar
  • 2 teaspoons horseradish sauce

Cooking Instructions

  1. Put potatoes in a pot of cold water, cover and bring to boil.
  2. Cook the potatoes for 15 minutes until tender.
  3. Drain well, tip back into the pan and add 1 tablespoon of olive oil.
  4. Season with salt and pepper.
  5. Cover the pan and shake well to mix.
  6. Add the potatoes into a large mixing salad bowl.
  7. Add the mackerel, cucumber, tomatoes, watercress and a pinch of salt and pepper.
  8. To make the dressing, combine together the horseradish, remaining oil and vinegar in a bowl.
  9. Season with salt and pepper to taste.
  10. Pour the dressing over the salad.
  11. Toss gently and serve.
