Ingredients (nutrition)
- 8 oz drained beets
- 8 oz drained pineapple chunks
- 2 peeled oranges, cut into wedges
- 2 sliced bananas
- 1/2 peeled and sliced jicama
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 3 cups shredded lettuce
- 1 lime, cut into wedges
- 1/4 cup chopped peanuts
- 1/2 cup pomegranate seeds
- 1 tablespoon anise seed
- 1 tablespoon sugar
Cooking Instructions
- Drain and reserve liquid from beets and pineapple.
- Add oranges, bananas, beets, pineapple and jicama in a large bowl.
- Mix reserved juices, lemon juice, 2 tablespoons sugar and salt. Pour over fruits. Set aside for 10 minutes and drain.
- Arrange fruit on shredded lettuce.
- Garnish with lime wedges, peanuts and pomegranate seeds.
- Mix anise seed and 1 tablespoon sugar sprinkle over salad.
