Typical Mexican salad

Ingredients (nutrition)

  • 8 oz drained beets
  • 8 oz drained pineapple chunks
  • 2 peeled oranges, cut into wedges
  • 2 sliced bananas
  • 1/2 peeled and sliced jicama
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 3 cups shredded lettuce
  • 1 lime, cut into wedges
  • 1/4 cup chopped peanuts
  • 1/2 cup pomegranate seeds
  • 1 tablespoon anise seed
  • 1 tablespoon sugar

Cooking Instructions

  1. Drain and reserve liquid from beets and pineapple.
  2. Add oranges, bananas, beets, pineapple and jicama in a large bowl.
  3. Mix reserved juices, lemon juice, 2 tablespoons sugar and salt. Pour over fruits. Set aside for 10 minutes and drain.
  4. Arrange fruit on shredded lettuce.
  5. Garnish with lime wedges, peanuts and pomegranate seeds.
  6. Mix anise seed and 1 tablespoon sugar sprinkle over salad.
