Ingredients (nutrition)
- 1 lb coarsely grated carrots
- 1 oz low fat spread
- 1 tablespoon mustard seeds
- 2 tablespoons freshly squeezed lemon juice
- salt and ground black pepper to taste
Cooking Instructions
- Put grated carrots in a salad bowl. Season well with salt and pepper.
- To make the dressing, melt low fat spread in a non stick pan over a medium heat. Add in mustard seeds. When the seeds start to pop, add lemon juice.
- Pour the mustard dressing over the carrots.
- Toss gently and serve while still warm.
