Carrot salad with mustard

Ingredients (nutrition)

  • 1 lb coarsely grated carrots
  • 1 oz low fat spread
  • 1 tablespoon mustard seeds
  • 2 tablespoons freshly squeezed lemon juice
  • salt and ground black pepper to taste

Cooking Instructions

  1. Put grated carrots in a salad bowl. Season well with salt and pepper.
  2. To make the dressing, melt low fat spread in a non stick pan over a medium heat. Add in mustard seeds. When the seeds start to pop, add lemon juice.
  3. Pour the mustard dressing over the carrots.
  4. Toss gently and serve while still warm.
