Vegetarian recipes: Pea salad

low carbohydrate pea salad

Ingredients (nutrition)

  • 3/4 cup mayonnaise
  • 1/2 cup chopped celery
  • 1/2 cup chopped onions
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon soy sauce
  • pinch of garlic salt
  • 1 large bag thawed and drained sweet peas
  • 1 can Chinese noodles (Chow Mein)
  • handful of sliced almonds

Cooking Instructions

  1. To make the dressing, mix together mayonnaise, celery, onions, lemon juice, soy sauce and garlic salt in a large mixing bowl.
  2. Fold in peas and mix well.
  3. Refrigerate for approximately 1 hour.
  4. Before serving, sprinkle with noodles and sliced almonds.
