Tuna and cannellini bean salad

simple tuna and cannellini bean salad

Ingredients (nutrition)

  • 2 crushed garlic cloves
  • 2 tablespoons balsamic vinegar
  • 3 tablespoons orange juice
  • juice of 2 limes
  • few dashes of Tabasco sauce
  • 1 tablespoon caster sugar
  • 7 oz canned flaked tuna in oil
  • 14 oz drained and rinsed canned cannelloni beans
  • 4 sliced spring onions
  • 2 chopped celery sticks
  • 1 tablespoon drained capers
  • 2 1/2 tablespoons chopped fresh flat leaf parsley

Cooking Instructions

  1. To make vinaigrette dressing, put garlic, vinegar, orange juice, lime juice, Tabasco sauce and caster sugar in a screwtop glass jar, seal tightly and shake well. Set aside.
  2. Put tuna in a bowl. Add in beans, spring onions, celery and capers.
  3. Pour the vinaigrette over the tuna salad.
  4. Add the parsley and toss to evenly distribute the dressing.
  5. Cover and chill for at least 1 hour until ready to serve.
