Ingredients (nutrition)

  • 2 ripe avocados
  • 1 pt chicken stock
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons lemon juice
  • 1/2 teaspoon chilli powder
  • salt to taste
  • 2 tablespoons sour cream

Cooking Instructions

  1. Peel and remove the seed of the avocado.
  2. Blend the avocado flesh into a puree.
  3. Add the remaining ingredients except the sour cream and blend until smooth.
  4. Allow to chill for approximately 2 hours before serving.
  5. Add the sour cream before served.
  6. Stir and serve the soup chilled.
