Ingredients (nutrition)
- 8 oz cubed stewing beef
- 1 finely chopped leek
- 11 oz dried red lentils
- 2 finely chopped celery sticks
- 3 finely chopped large carrots
- 1 tablespoon vegetable oil
- 2 finely chopped onions
- 2 tablespoons plain flour
- 2 fl oz dry white wine
Cooking Instructions
- Bring 3 pt water to the boil in a saucepan.
- Add the beef, leek, lentils, celery and carrots and return to boil.
- Reduce the heat, cover the pan and simmer for approximately 45 minutes.
- Remove the beef and drain on kitchen paper towel.
- Brown in the oil in a frying pan over a high heat.
- When the pan is hot, add the onions and saute for 15 minutes with frequent stirrings.
- Add the flour over the onions and stir until the flour turn brown.
- Pour 8 fl oz of the lentil mixture over the onions and stir continuously.
- Add the white wine and cook for a about 1 minute.
- Add the contents of the frying pan into the lentil mixture.
- Simmer for 30 minutes before serving.
