Ingredients (nutrition)

  • 1 medium broken into florets cauliflower
  • 1 roughly chopped onion
  • 3/4 pt vegetable stock
  • 3/4 pt milk
  • 1 oz walnut
  • salt and ground black pepper to taste

Cooking Instructions

  1. Add the cauliflower, onion and stock in a saucepan.
  2. Bring to the boil, cover and simmer for about 20 minutes until soft.
  3. Add the milk and walnuts and stir.
  4. Pour the contents of the pan into a blender to form a smooth puree.
  5. Pour back into a clean pan.
  6. Season well with salt and pepper and bring to the boil.
  7. Serve while still warm.
