Creamy Celery and Stilton Soup

Ingredients (nutrition)

  • 4 finely chopped celery sticks
  • 1 finely chopped onion
  • 2 oz butter
  • 1 1/2 oz plain flour
  • 1/2 glass white wine
  • 1 1/2 pt chicken stock
  • 10 fl oz milk
  • 8 oz crumbled Stilton
  • cheese
  • salt and ground black pepper to taste

Cooking Instructions

  1. Sweat the celery and onion in butter until soft in a saucepan over a low heat.
  2. Add in flour and remove from the heat.
  3. Pour in the wine and stock and stir continuously.
  4. Return to the heat and slowly bring to the boil, stir until the mixture thickens.
  5. Simmer for 20 minutes.
  6. Add in milk and simmer for another 3 minutes and remove from the heat.
  7. Whisk in the Stilton.
  8. Pour the contents of the pan into a blender to form a smooth puree.
  9. Sieve through the puree into a clean pan.
  10. Season well with salt and pepper and bring to boil.
  11. Serve while still warm.
