Ingredients (nutrition)
- 4 finely chopped celery sticks
- 1 finely chopped onion
- 2 oz butter
- 1 1/2 oz plain flour
- 1/2 glass white wine
- 1 1/2 pt chicken stock
- 10 fl oz milk
- 8 oz crumbled Stilton
- cheese
- salt and ground black pepper to taste
Cooking Instructions
- Sweat the celery and onion in butter until soft in a saucepan over a low heat.
- Add in flour and remove from the heat.
- Pour in the wine and stock and stir continuously.
- Return to the heat and slowly bring to the boil, stir until the mixture thickens.
- Simmer for 20 minutes.
- Add in milk and simmer for another 3 minutes and remove from the heat.
- Whisk in the Stilton.
- Pour the contents of the pan into a blender to form a smooth puree.
- Sieve through the puree into a clean pan.
- Season well with salt and pepper and bring to boil.
- Serve while still warm.
