Ingredients (nutrition)

  • 2 oz butter
  • 2 lb thinly sliced onions
  • 1 1/2 pt vegetable stock
  • salt and ground black pepper to taste

Cooking Instructions

  1. Fry the onions in the butter in a covered saucepan for 15 minutes until soft and starting to caramelize.
  2. Remove the lid, increase to high heat and fry for about 15 minutes until the onions are golden brown.
  3. Add the stock and bring to the boil.
  4. Reduce the heat, partly cover the saucepan and simmer for 15 minutes.
  5. Season well with salt and pepper and serve while still warm.
