Ingredients (nutrition)
- 1 diced onion
- 3 finely chopped garlic cloves
- 1 tablespoon olive oil
- 6 oz chopped celery
- 6 oz chopped carrots
- 1 chopped small yellow squash
- 1 chopped small courgette
- 14 oz canned chopped tomatoes
- 4 oz sliced mushrooms
- 7 oz chopped cauliflower
- 7 oz broken into florets fresh broccoli
- 7 fl oz tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 3 crumbled chicken stock cubes
Cooking Instructions
- Saute lightly onions and garlic with oil in a saucepan.
- Add the celery and carrots and sweat for about 4 minutes.
- Add in squash and courgette. Cook for another 4 minutes.
- Add the remaining ingredients and 3 pt water.
- Bring to the boil and simmer for 20 minutes.
- Serve while still warm.
